Safe Egg Storage

  • Refrigerate at 45 degrees F. or below (Do not freeze!)
  • Store shell eggs in the case they come in
  • Store away from strong odors
  • Rotate-first in/first out

Safe Egg Handling

  • Wash hands
  • Use only clean, uncracked eggs
  • Do not reuse a container that has had raw egg in it
  • Use clean, sanitized utensils and equipment

Preparation 

  • Cook eggs thoroughly
  • Hold cold egg dishes BELOW 40 degrees F.
  • Hold hot egg dishes ABOVE 140 degrees F.
  • Never leave egg dishes at room temperature more than 1 hour.
    (this includes preparation time)
